Recipe Wednesdays: Veggie Meze Board

I’m not entirely sure that I can call this a recipe, but this Wednesday I wanted to share with you my absolute fave dinner of the past week.

Served up on our huge wooden chopping board we watched week night tv nibbling at this greek feast of a veggie meze board. Super simple but really delicious and quick to make when you’ve got home from a hectic day at work.

Follow the steps below to re-create our meal for 2 people, or get creative with you own additions.

Ours included hummus, tzatziki, halloumi, garlic flatbread, pitta, carrots and cucumber.

For the hummus you’ll need:

  • 1 tin of chickpeas
  • 1 clove of garlic
  • 1 tablespoon of tahini
  • salt and pepper
  • extra virgin olive oil

Basically drain the chickpeas, then chuck everything in a blitzed/mini chopper and whizz it up until it’s nice and smooth. The ingredients I’ve listed above are really rough so just keep tasting as you go to get the balance right.

For the tzatziki you’ll need:

  • greek yoghurt
  • 1 clove of garlic
  • cucumber
  • salt

Fill your bowl with as much greek yoghurt as you like and then flavour with the crushed garlic clove, super finely chopped cucumber and a pinch of salt. Again taste and flavour as you go.

For the halloumi:

Just chop it up and throw in a frying pan with some olive oil. Once one side is golden turn them over. It doesn’t take very long so keep an eye on them. You want them golden, not black.

For post-work convenience we were a bit lazy with the garlic flatbread and just got a ready made one from Sainsbury’s that we chucked in the oven to warm through.

Then all you have to do is chop the carrots and cucumber, toast your pittas, and assemble everything on a board so you can tuck in!
